- 1lb Thinly sliced pancetta
- 3 Garlic cloves, minced
- Olive oil

- Pepper Cornstarch

- In a bowl, combine minced garlic with olive oil, salt, and pepper to create a marinade.
- Lay out thinly sliced pancetta on a cutting board. Use a meat hammer to gently pound each slice to flatten it slightly.
- Pour the garlic marinade over the pancetta slices, ensuring each slice is coated evenly. Let the pancetta marinate for at least 30 minutes, allowing the flavors to infuse.
- After marinating, lightly dust each pancetta slice with cornstarch, shaking off any excess.
- Heat oil in a frying pan over medium heat (350°F or 175°C). Carefully add the marinated and dusted pancetta slices to the hot oil in a single layer, avoiding overcrowding.
- Fry for about 2-3 minutes per side until golden brown and crispy, flipping halfway through.
- Transfer fried pancetta to a plate lined with paper towels to drain excess oil.Allow to cool for a few minutes before serving.
