Ingredients
- 800g Black Tiger prawns (raw, peeled, and deveined)
- 3 tbsp olive oil
- 2 tbsp butter
- Juice of ½ lemon (for the marinade)
- Zest of ½ lemon (for finishing)
- 4 garlic cloves, finely crushed using the Gourmet Easy Garlic Combo
- 3 garlic cloves, coarsely crushed using the Gourmet Easy Garlic Combo
- 1 tsp smoked paprika (optional)
- Salt and pepper, to taste
- Fresh parsley, finely chopped Wooden skewers, soaked in water for about 30 minutes
Method
- In a bowl, combine oliveoil, lemon juice, finely crushed garlic, smoked paprika, salt, and pepper. Add the prawns and mix well until evenly coated. Cover and marinate for 20–30 minutes in the refrigerator.
- Thread the marinated prawns onto the soaked wooden skewers — about 4 to 5 prawns per skewer, depending on their size.
- Preheat a grill pan, griddle, or barbecue over medium- high heat. Grill each skewer for 1–2 minutes per side, until the prawns turn pink and lightly caramelized. Avoid overcooking to keep them tender and juicy.
- Ina small pan, melt the butter over low heat. Add the coarsely crushed garlic and sauté until golden brown and fragrant. Drizzle the roasted garlic butter over the cooked prawns. Sprinkle with chopped parsley and finish with a touch of fresh lemon zest.
