Ingredients

  • (For the Fish)
  • 4 fish fillets (such as tilapia, cod, or salmon)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • (For the Broccoli and Mushroom Sides)
  • 2 cups broccoli florets
  • 2 cups sliced mushrooms (such as cremini or button mushrooms)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste Optional: grated Parmesan cheese for garnish

Method

  1. For the Fish:
  2. Preheat your oven to 375°F (190°C).
  3. Place the fish fillets on a baking sheet lined with parchment paper or aluminum foil. Season both sides of the fillets with salt and pepper.
  4. In a small bowl, combine the olive oil, minced garlic, lemon zest, and lemon juice. Mix well.
  5. Drizzle the garlic lemon mixture evenly over the fish fillets.
  6. Cover the fish with another piece of parchment paper or foil, folding the edges to seal it into a packet.
  7. Bake in the preheated oven for about 15-20 minutes, or until the fish is cooked through. The exact cooking time will depend on the thickness of your fillets, so check for doneness by flaking the fish with a fork; it should easily separate into flakes.
  8. Remove the fish from the oven, garnish with chopped fresh parsley or sliced lemons, and keep it covered to stay warm while you prepare the sides.
