Ingredients
- (For the Fish)
- 4 fish fillets (such as tilapia, cod, or salmon)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- Zest of 1 lemon
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- (For the Broccoli and Mushroom Sides)
- 2 cups broccoli florets
- 2 cups sliced mushrooms (such as cremini or button mushrooms)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste Optional: grated Parmesan cheese for garnish
Method
- For the Fish:
- Preheat your oven to 375°F (190°C).
- Place the fish fillets on a baking sheet lined with parchment paper or aluminum foil. Season both sides of the fillets with salt and pepper.
- In a small bowl, combine the olive oil, minced garlic, lemon zest, and lemon juice. Mix well.
- Drizzle the garlic lemon mixture evenly over the fish fillets.
- Cover the fish with another piece of parchment paper or foil, folding the edges to seal it into a packet.
- Bake in the preheated oven for about 15-20 minutes, or until the fish is cooked through. The exact cooking time will depend on the thickness of your fillets, so check for doneness by flaking the fish with a fork; it should easily separate into flakes.
- Remove the fish from the oven, garnish with chopped fresh parsley or sliced lemons, and keep it covered to stay warm while you prepare the sides.
