Weight does the work: both presses hold burgers, bacon and sandwiches flat against the heat for an edge-to-edge sear, and stop bacon curling at the edges. The Burger Press is two pounds of cast iron for grills and griddles; the Grill Press is the flat-top and panini one. Heat-resistant handles on both, so you can move them around a hot surface.
