Try this authentic Eggplant Kebob Recipe that will surely make you crave for more.

Ingredients:
For Meatballs:
- 1 Pound Ground Beef
- 1 Grated Onion
- 1 Crushed Garlic Clove
- 7 tablespoons of Breadcrumbs
- 1 Egg
- I teaspoon turmeric
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- Finely Grated Fresh Parsley
- 1 tablespoon pepper paste (or Ketchup)
- 2 medium eggplants
- 2-3 medium tomatoes
- 3-4 Hot Green Pepper
Sauce:
- 1 tablespoon butter
- 2 tablespoons tomato paste
- 1-2 cloves garlic
- 2 cups of water
- Salt
- Black pepper
Directions:

Grate meatball ingredients thoroughly.

Roll and press the meatballs and roll them on a greasy paperback oven tray and place the peppers on the sides.

Apply melted butter over meatballs and peppers with a brush. Bake for 15 minutes in a preheated 350 degree oven to fry. Don’t cook for a long time.

Slice the eggplants and let them sit in salt and water for a while then dry.

Grill or fry the eggplants a little back to back.

Place in the tray that will be a meatball, an eggplant and a tomato slice. Place peppers between them too.

Saute butter, paste and garlic in a small pot. Add water, salt , black pepper and mix. Spread the sauce over the meatballs. Cover with greasy paper and bake for 45 minutes.
